The form is intended for formation of firm cheese of type "Manchego".
Form for cheese "St. Paulin" Ø 210 mm.
In this form we receive cheese weighing up to 4 kg. size: D=204 mm. and up to 85 mm high.
Important condition of pressing is preservation of temperature of cheese weight. At bystry cooling of cheese during pressing process of lactic fermentation and office of serum is slowed down, active acidity of cheese weight increases. Thereof dehydration and consolidation of cheese, short circuit of its blanket worsen. Therefore it is necessary to apply thick - walled plastic forms with the punched inserts to providing the technological modes of production of cheese.
Set of plastic forms (a basis + a cover) for production of firm cheese:
Basis: the internal sizes d - 210 mm, h - 114 mm.
Cover: the sizes external d – 205 mm, h - 74 mm.
In addition the form can be completed with the punched insert from food Ø stainless steel of 205 mm. for convenience in operation.
